Make these easy, high-protein cottage cheese egg bites at home. This recipe fixes common issues to give you perfect, fluffy, crustless quiche cups ideal for meal prep.

  • 1 cup cottage cheese (full fat or low fat)
  • 6 large eggs
  • 1/4 cup shredded cheese (Monterey Jack or cheddar)
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 cup mix-ins (chopped spinach, cooked bacon bits, or diced ham)

Instructions

  1. Preheat your oven to 325°F (160°C). Lightly grease a 12-cup muffin tin or silicone egg bite mold.
  2. In a blender or food processor, combine the cottage cheese and eggs. Blend until the mixture is completely smooth, about 30 seconds. This step is key for a smooth texture, similar to the Starbucks egg bites.
  3. Pour the blended egg mixture into a bowl. Stir in the shredded cheese, salt, and pepper. Do not overmix.
  4. Divide your chosen mix-ins evenly among the prepared muffin cups.
  5. Carefully pour the egg mixture over the mix-ins, filling each cup about three-quarters full.
  6. Bake for 20 to 25 minutes, or until the egg cups are set and a toothpick inserted near the center comes out clean.
  7. Let the egg cups cool in the tin for 5 minutes before carefully removing them.
  8. For meal prep, cool completely before storing in an airtight container in the refrigerator for up to 4 days.

Notes

  • For a texture closer to sous-vide, use a silicone mold and place the muffin tin in a water bath (bain-marie) before baking.
  • If you do not have a blender, you can use an immersion blender directly in a large measuring cup, or whisk vigorously until the cottage cheese curds are mostly broken down.
  • These protein egg cups reheat well in the microwave for 30-45 seconds.
