Make this hearty Cowboy Cornbread Casserole when you need a filling, budget-friendly meal fast. It layers seasoned ground beef, corn, and cheese under a simple, fluffy cornbread topping made with Jiffy Mix.

  • 1 pound ground beef
  • 1 can (15 ounces) whole kernel corn, drained
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, drained
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup shredded cheddar cheese, divided
  • 1 box (8.5 ounces) Jiffy Corn Muffin Mix
  • Ingredients listed on Jiffy box for cornbread batter (usually milk and eggs)
  • Salt, pepper, and paprika to taste

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a 9×13 inch baking dish.
  2. Brown the ground beef in a skillet over medium heat. Drain off any excess grease.
  3. In a large bowl, combine the cooked ground beef, drained corn, drained Rotel, cream of mushroom soup, and half of the shredded cheddar cheese. Season this mixture with salt, pepper, and paprika.
  4. Spread the beef mixture evenly into the bottom of your prepared baking dish. This is your savory beef filling.
  5. Prepare the Jiffy Corn Muffin Mix according to the package directions, using the milk and eggs specified on the box to create the batter.
  6. Pour the prepared cornbread batter directly over the beef mixture in the baking dish. Spread it gently to cover the filling.
  7. Sprinkle the remaining half cup of shredded cheddar cheese over the top of the cornbread batter.
  8. Bake for 25 to 30 minutes, or until the cornbread topping is golden brown and a toothpick inserted into the center comes out clean.
  9. Let the casserole rest for 5 minutes before you cut and serve this comfort food casserole dinner.

  • For a Tex-Mex twist, add 1 tablespoon of taco seasoning to the ground beef mixture while cooking.
