This is a deeply comforting, classic Tomato Basil Soup, perfect for warming you up on a cold night. We fixed the common pitfalls of watery or bland versions to bring you a foolproof, soul-soothing bowl.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes, high quality
  • 4 cups vegetable or chicken broth
  • 1/2 cup heavy cream (optional, for richness)
  • 1/2 cup fresh basil leaves, packed
  • 1 teaspoon sugar (to balance acidity)
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant. Do not let it burn.
  4. Pour in the crushed tomatoes and the broth. Add the sugar, salt, and pepper.
  5. Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for 20 minutes, allowing flavors to meld.
  6. Remove the pot from the heat. Stir in the heavy cream, if using.
  7. Add the fresh basil leaves. Use an immersion blender or carefully transfer the soup in batches to a standard blender to blend until completely smooth.
  8. Return the soup to the pot if necessary. Taste and adjust seasoning. Heat through gently before serving.

Notes

  • For a richer flavor, roast the tomatoes and onions before simmering.
  • If you skip the cream, the soup will be lighter and naturally vegan.
  • Always add fresh basil off the heat to keep its bright flavor.
  • Use high-quality canned tomatoes; they make a significant difference in the final taste.
