2 lbs boneless, skinless chicken breasts
1 tablespoon olive oil
1 large onion, chopped
2 cloves garlic, minced
1 (4 ounce) can green chilies, undrained
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper (adjust to your heat preference)
4 cups chicken broth
1 (15 ounce) can cannellini beans, rinsed and drained
1 (15 ounce) can great northern beans, rinsed and drained
1 cup heavy cream or half-and-half
Salt and black pepper to taste
Optional toppings: Shredded Monterey Jack cheese, fresh cilantro, avocado
Instructions
Place chicken breasts in a large pot or Dutch oven. Cover with chicken broth. Bring to a boil, then reduce heat, cover, and simmer until chicken is cooked through, about 15-20 minutes.
Remove chicken and shred it using two forks. Set the shredded chicken aside. Keep the broth in the pot.
In the same pot, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes.
Add minced garlic, green chilies, cumin, oregano, and cayenne pepper. Cook for 1 minute until fragrant.
Pour in the reserved chicken broth. Bring the mixture to a simmer.
Stir in the rinsed cannellini beans and great northern beans. Simmer for 10 minutes, allowing the flavors to meld.
Return the shredded chicken to the pot.
Reduce heat to low. Slowly stir in the heavy cream or half-and-half. Heat through gently; do not boil after adding cream.
Season with salt and black pepper to your taste.
Serve hot with your favorite toppings.
Notes
For extra flavor, you can poach the chicken with a bay leaf and a few peppercorns.
If you prefer a thicker chili, mash about 1/4 cup of the white beans against the side of the pot before adding the cream.
This chili freezes well. Cool completely before transferring to freezer-safe containers.
