A quick, dairy-free pasta dish featuring a rich, creamy sauce made from fresh avocado, lemon, and garlic.

Ingredients

  • 12 oz pasta (spaghetti or linguine)
  • 2 ripe avocados
  • 1/4 cup fresh basil leaves
  • 2 cloves garlic
  • 1/4 cup fresh lemon juice
  • 1/4 cup water (or pasta water)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: 1/4 cup chopped cilantro

Instructions

  1. Cook pasta according to package directions. Reserve about 1/2 cup of the starchy cooking water before draining.
  2. While the pasta cooks, prepare the sauce. Combine the avocados, basil, garlic, lemon juice, water, olive oil, salt, and pepper in a food processor or high-speed blender.
  3. Blend the ingredients until the sauce is completely smooth and creamy. Add more water, one tablespoon at a time, if the sauce is too thick.
  4. Drain the cooked pasta and return it to the pot.
  5. Pour the avocado sauce over the warm pasta. Toss gently to coat everything evenly. If the sauce seems too thick, add a splash of the reserved pasta water until you reach your desired consistency.
  6. Serve immediately.

Notes

  • For a brighter green color, add a handful of fresh spinach to the blender with the other sauce ingredients.
  • If you do not have a food processor, you can mash the avocado very well and whisk vigorously with the other ingredients, though the texture will be less smooth.
  • This sauce is best eaten immediately as the avocado can brown over time.
