  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (9 ounce) package refrigerated cheese tortellini
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain off any excess fat.
  2. Add the chopped onion to the pot and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the beef broth and add the diced tomatoes, Italian seasoning, basil, salt, and pepper. Bring the mixture to a simmer.
  5. Reduce heat to medium-low, cover, and let it simmer for 10 minutes to allow the flavors to meld.
  6. Add the refrigerated tortellini to the simmering soup. Cook according to package directions, usually about 5 to 7 minutes, until the tortellini float and are cooked through.
  7. Reduce the heat to low. Stir in the heavy cream and grated Parmesan cheese. Heat gently until warmed through; do not boil after adding the cream.
  8. Taste and adjust seasonings if needed.
  9. Ladle the soup into bowls and garnish with fresh parsley before serving.
