  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Toss the shrimp with Cajun seasoning and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 3 minutes.
  3. Add the minced garlic and cook for 1 minute until fragrant.
  4. Stir in the orzo, smoked paprika, and thyme. Toast for 1 minute.
  5. Pour in the chicken broth. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10 minutes, or until the orzo absorbs most of the liquid.
  6. Stir in the heavy cream and Parmesan cheese. Cook until the sauce thickens slightly.
  7. Add the seasoned shrimp to the skillet. Cook for 3-5 minutes, stirring occasionally, until the shrimp are pink and cooked through.
  8. Taste and adjust seasoning with salt and pepper if needed.
  9. Garnish with fresh parsley before serving.
