A simple recipe for a comforting, cheesy tuna pasta bake that is quick enough for a weeknight meal.

300g dried pasta (e.g., macaroni or penne)
2 x 185g cans tuna in spring water, drained
50g butter
50g plain flour
600ml milk
1 tsp Dijon mustard
150g mature cheddar cheese, grated (divided)
50g frozen peas
Salt and black pepper to taste
50g breadcrumbs
Instructions
Preheat your oven to 200C (180C fan/Gas Mark 6). Lightly grease a medium baking dish.
Cook the pasta according to package directions until just tender. Drain well and set aside.
While the pasta cooks, make the sauce. Melt the butter in a saucepan over medium heat. Stir in the flour and cook for one minute, stirring constantly, to make a roux.
Gradually whisk in the milk, ensuring no lumps form. Bring the sauce to a simmer, stirring until it thickens enough to coat the back of a spoon.
Remove the pan from the heat. Stir in the Dijon mustard and 100g of the grated cheddar cheese until melted and smooth. Season with salt and pepper.
Gently fold the drained tuna, cooked pasta, and frozen peas into the cheese sauce until everything is coated.
Pour the mixture into your prepared baking dish.
Mix the remaining 50g of cheddar cheese with the breadcrumbs. Sprinkle this topping evenly over the pasta mixture.
Bake for 20 to 25 minutes, or until the top is golden brown and the filling is bubbling hot.
Notes
For extra flavor, add a pinch of nutmeg to the white sauce before adding the cheese.
If you do not have frozen peas, you can use canned sweetcorn instead.
