Ingredients

Scale
  • 1 pound uncooked fettuccine pasta
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 2 cups heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • 1/4 teaspoon ground nutmeg
  • 2 cups shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. Cook the fettuccine according to package directions until al dente. Drain the pasta and set it aside.
  3. While the pasta cooks, heat the olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper.
  4. Add the chicken to the skillet and cook until browned and cooked through. Remove the chicken and set it aside.
  5. Reduce the heat to medium. Add the butter to the skillet. Once melted, add the minced garlic and cook for about 30 seconds until fragrant.
  6. Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, stirring often. Do not boil rapidly.
  7. Reduce the heat to low. Stir in the 1/2 cup of Parmesan cheese and nutmeg until the sauce is smooth.
  8. Return the cooked chicken to the skillet. Add the drained fettuccine and toss everything gently until the pasta is fully coated in the sauce.
  9. Transfer the pasta mixture to your prepared baking dish.
  10. Sprinkle the shredded mozzarella cheese evenly over the top.
  11. Bake for 15 to 20 minutes, or until the cheese is melted and bubbly and the edges are slightly golden.
  12. Let the bake rest for 5 minutes before serving. Garnish with fresh parsley.

Notes

  • For extra flavor, use freshly grated Parmesan cheese instead of pre-shredded.
  • If you prefer a thicker sauce before baking, simmer the cream and broth mixture for an extra 3-5 minutes to reduce slightly.
  • You can substitute rotisserie chicken for the fresh chicken breasts to save prep time.
