Ingredients

  • 1 tablespoon coconut oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 (15 ounce) can pumpkin puree
  • 1 (13.5 ounce) can full-fat coconut milk
  • 4 cups vegetable broth
  • 1 cup red lentils, rinsed
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat coconut oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  2. Add the minced garlic and grated ginger. Cook for 1 minute more until fragrant.
  3. Stir in the ground cumin, coriander, turmeric, and cayenne pepper (if using). Cook for another minute, stirring constantly.
  4. Add the pumpkin puree and stir to combine with the spices.
  5. Pour in the coconut milk and vegetable broth. Bring the mixture to a simmer.
  6. Add the rinsed red lentils. Stir well.
  7. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and the dal has thickened. Stir occasionally to prevent sticking.
  8. Season with salt to taste.
  9. Serve hot, garnished with fresh cilantro.

Notes

  • For a thinner consistency, add more vegetable broth.
  • Adjust cayenne pepper to your spice preference.
  • This dal can be made ahead and reheats well.
