4 boneless pork chops (about 1 inch thick)
1 tablespoon olive oil
1 tablespoon butter
Salt and black pepper to taste
1/2 cup chicken broth
1/4 cup Dijon mustard
1/2 cup heavy cream
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Season both sides of the pork chops generously with salt and pepper.
Heat olive oil and butter in a large skillet over medium-high heat.
Sear pork chops for 4-5 minutes per side until golden brown and cooked through (internal temperature reaches 145°F). Remove chops from the skillet and set them aside on a plate.
Reduce the heat to medium. Pour the chicken broth into the skillet, scraping up any browned bits from the bottom. Let it simmer for 1 minute.
Whisk in the Dijon mustard until smooth.
Pour in the heavy cream and stir well. Let the sauce gently simmer and thicken for 3-4 minutes. Do not boil rapidly.
Return the pork chops to the skillet. Spoon the sauce over the chops.
Cook for 1 minute to heat the chops through.
Remove from heat. Garnish with fresh parsley before serving.

Use thin-cut chops for quicker cooking, adjusting sear time as needed.
