A rich, smooth, and intensely garlicky low-carb alternative to traditional mashed potatoes.

  • 1 large head cauliflower, cut into florets
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter
  • 4 ounces cream cheese, softened
  • 1/2 cup heavy cream (or unsweetened almond milk for lower fat)
  • 1/4 cup grated Parmesan cheese (optional)
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 tablespoon fresh chives, chopped (for garnish)

Instructions

  1. Place the cauliflower florets in a large pot and cover them with water. Add a pinch of salt to the water. Bring to a boil and cook until the cauliflower is very tender, about 12 to 15 minutes.
  2. While the cauliflower cooks, melt the butter in a small skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown. Remove from heat.
  3. Drain the cooked cauliflower thoroughly. This step is important to prevent watery mash. Let it sit in the colander for 5 minutes to steam dry.
  4. Transfer the drained cauliflower to a food processor or a large bowl if using a hand masher.
  5. Add the softened cream cheese, heavy cream, salt, and pepper to the cauliflower.
  6. Process or mash until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed.
  7. If using, pulse in the Parmesan cheese until just combined.
  8. Stir in the sautéed garlic and butter mixture. Taste and adjust salt and pepper if necessary.
  9. Serve immediately, garnished with fresh chives.

Notes

  • To prevent watery mash, squeeze excess moisture from the cooked cauliflower using a clean kitchen towel or cheesecloth before processing.
  • For a deeper garlic flavor, roast the garlic cloves wrapped in foil with a drizzle of olive oil before adding them to the butter.
  • If you prefer a thinner consistency, add more heavy cream, one tablespoon at a time, until you reach your desired texture.
