1 tablespoon olive oil
2 tablespoons unsalted butter
4 cloves garlic, minced
1 small shallot, finely chopped
1 1/2 cups orzo pasta
3 cups low-sodium chicken or vegetable broth
1/2 cup heavy cream
1 cup fresh spinach, packed
1/2 cup grated Parmesan cheese, plus more for serving
1/4 teaspoon black pepper

Instructions
Heat the olive oil and butter in a large skillet or Dutch oven over medium heat.
Add the minced garlic and chopped shallot. Cook for 1 minute until fragrant, being careful not to burn the garlic.
Add the orzo pasta to the skillet. Toast the orzo for 2 minutes, stirring constantly, until the edges look slightly golden.
Pour in the broth. Bring the mixture to a simmer, then reduce the heat to medium-low. Cook, stirring frequently, for about 12 to 15 minutes, or until the orzo is tender and most of the liquid is absorbed.
Stir in the heavy cream and black pepper. Let it simmer gently for 1 minute to thicken slightly.
Add the fresh spinach. Stir until the spinach wilts completely into the sauce, about 1 to 2 minutes.
Remove the skillet from the heat. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. Add salt if needed.
Serve immediately, topped with extra Parmesan cheese.
Notes
For a richer flavor, use half-and-half instead of heavy cream, though the sauce will be slightly thinner.
You can substitute shrimp or cooked shredded chicken for a heartier meal; add them in step 6 to heat through.
Stirring often during the cooking process prevents the orzo from sticking to the bottom of the pan.
