  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 medium yellow onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • 1 (16 ounce) package potato gnocchi
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add chicken pieces and cook until lightly browned on all sides. You do not need to cook them through.
  3. Add onion, carrots, and celery to the pot. Sauté until vegetables begin to soften, about 5 to 7 minutes.
  4. Stir in minced garlic and cook for 1 minute until fragrant.
  5. Pour in chicken broth. Add thyme, rosemary, and bay leaf. Bring the soup to a simmer.
  6. Reduce heat to low, cover, and let simmer for 15 minutes, allowing the flavors to meld and the chicken to cook completely.
  7. Remove and discard the bay leaf.
  8. Add the gnocchi to the simmering soup. Cook according to package directions, usually 3 to 5 minutes, until the gnocchi float.
  9. Reduce heat to the lowest setting. Stir in the heavy cream and Parmesan cheese until the soup is creamy. Do not let the soup boil after adding the cream.
  10. Season generously with salt and pepper to your taste.
  11. Ladle the soup into bowls. Garnish with fresh parsley before serving.

  • For extra flavor, you can start this recipe with shredded rotisserie chicken instead of raw chicken breasts. Add it in step 6.
