Enjoy a lighter version of classic mac and cheese. This recipe delivers the creamy comfort you crave using Greek yogurt for a healthier twist without sacrificing flavor. You get satisfying comfort food with less guilt.

Ingredients

Scale
  • 1 pound elbow macaroni
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk (whole or 2%)
  • 1 cup chicken or vegetable broth
  • 1 cup plain Greek yogurt (full-fat recommended for best creaminess)
  • 8 ounces sharp cheddar cheese, shredded
  • 4 ounces Monterey Jack cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg

Instructions

  1. Cook the macaroni according to package directions until al dente. Drain and set aside.
  2. While the pasta cooks, melt the butter in a large saucepan over medium heat.
  3. Whisk in the flour. Cook, stirring constantly, for one minute. This cooks out the raw flour taste.
  4. Gradually whisk in the milk and broth until smooth.
  5. Bring the mixture to a simmer, stirring often. Let it cook until the sauce thickens enough to coat the back of a spoon, about 5 to 7 minutes.
  6. Remove the saucepan from the heat. Let it cool for two minutes.
  7. Whisk in the Greek yogurt until fully incorporated and smooth. Do not boil the sauce after adding yogurt, or it may curdle.
  8. Stir in the shredded cheeses, salt, pepper, and nutmeg until the cheese melts completely into a smooth sauce.
  9. Add the cooked, drained macaroni to the cheese sauce. Stir gently to coat every piece.
  10. Serve immediately for the creamiest texture.

Notes

  • Use full-fat Greek yogurt; lower fat versions can make the sauce break or taste too tangy.
  • Shred your own cheese. Pre-shredded cheese contains additives that prevent smooth melting.
  • For extra tang, substitute 1/2 cup of the milk with a splash of lemon juice added at the end.
  • This recipe tastes best served right away, as the sauce will thicken considerably upon standing.
