This recipe delivers tender, seared chicken thighs bathed in a rich, earthy mushroom cream sauce. It is a comforting skillet dinner with deep, restaurant-quality flavor.
Season the chicken thighs generously with salt and pepper.
Heat the olive oil in a large skillet over medium-high heat.
Sear the chicken thighs for 5-7 minutes per side until golden brown and cooked through (internal temperature of 165°F). Remove chicken from the skillet and set aside.
Reduce the heat to medium. Add the butter to the skillet.
Add the sliced mushrooms to the skillet and cook until they release their moisture and turn golden brown, about 5-7 minutes.
Add the minced shallot and garlic to the mushrooms. Cook for 1 minute until fragrant.
If using wine, pour it into the skillet and scrape up any browned bits from the bottom. Let it reduce by half.
Pour in the chicken broth and add the dried thyme. Bring to a simmer and cook for 3 minutes, allowing the sauce to slightly thicken.
Stir in the heavy cream. Let the sauce simmer gently for 2 minutes. Taste and adjust salt and pepper.
Return the cooked chicken thighs to the skillet, nestling them into the sauce. Spoon some sauce over the chicken.

For the best sear, pat your chicken thighs very dry before seasoning.
If you skip the white wine, use an equal amount of extra chicken broth, perhaps adding a tiny squeeze of lemon juice for brightness.
Use fresh mushrooms for the best earthy flavor; dried mushrooms will change the liquid ratios.
