Make this Creamy Pesto Gnocchi for a fast, flavorful Italian dinner. You get soft gnocchi coated in a rich, bright pesto sauce with minimal work.

Ingredients

Scale
  • 1 pound potato gnocchi
  • 1 cup heavy cream
  • 1/2 cup prepared basil pesto
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Cook the gnocchi according to package directions until they float. Drain well and set aside.
  2. In a large skillet over medium heat, melt the butter.
  3. Add the minced garlic and cook for 30 seconds until fragrant. Do not let it brown.
  4. Pour in the heavy cream and bring it to a gentle simmer.
  5. Reduce the heat to low. Stir in the basil pesto until the sauce is smooth and uniformly green.
  6. Add the drained gnocchi to the skillet. Toss gently to coat every piece in the sauce.
  7. Stir in the grated Parmesan cheese until the sauce thickens slightly.
  8. Season with salt and pepper to your taste.
  9. Serve immediately.

Notes

  • Use store-bought pesto for supreme speed.
  • If the sauce seems too thick, add a splash of the reserved pasta water from cooking the gnocchi.
  • Feel free to add toasted pine nuts as a garnish for crunch.
