  • 2 large heads cauliflower, cut into florets
  • 1 large yellow onion, roughly chopped
  • 6 cloves garlic, peeled
  • 3 tablespoons olive oil
  • 1 teaspoon salt, divided
  • 1/2 teaspoon black pepper, divided
  • 4 cups low-sodium chicken or vegetable broth
  • 1/2 cup milk (whole milk recommended for best texture)
  • 1/2 cup sharp cheddar cheese, shredded (optional, for swirl)
  • 2 tablespoons fresh chives, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cauliflower florets, onion, and garlic cloves with the olive oil, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper on a large baking sheet. Spread them in a single layer.
  3. Roast for 25 to 30 minutes, stirring halfway through, until the cauliflower edges are lightly browned and tender. Roasting deepens the flavor significantly.
  4. Transfer the roasted vegetables to a large pot or Dutch oven.
  5. Add the broth to the pot. Bring the mixture to a simmer over medium heat. Cook for 5 minutes to allow the flavors to meld.
  6. Carefully use an immersion blender to blend the soup until completely smooth and velvety. Alternatively, transfer the soup in batches to a standard blender, blend until smooth, and return it to the pot.
  7. Stir in the milk and the remaining 1/2 teaspoon of salt and 1/4 teaspoon of pepper. Heat through gently, but do not boil after adding the milk.
  8. To serve, ladle the soup into bowls. If using, sprinkle a small amount of shredded cheddar cheese over the center of the hot soup and allow it to melt slightly, creating a cheese swirl. Garnish with fresh chives.

  • For a truly low-carb or keto cauliflower soup, skip the optional cheddar cheese and use heavy cream instead of milk for richness.
  • If you prefer a dairy-free cauliflower soup, substitute the milk with an equal amount of unsweetened cashew or almond milk, and omit the cheddar cheese.
