  • 1 pound pasta (linguine or penne recommended)
  • 2 large red bell peppers
  • 1/2 cup raw cashews (soaked in hot water for 30 minutes)
  • 2 cloves garlic
  • 1/4 cup nutritional yeast
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1/4 cup reserved pasta water
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place the whole red bell peppers on a baking sheet.
  2. Roast the peppers for 20 to 25 minutes, turning occasionally, until the skins are blackened and blistered.
  3. Place the hot roasted peppers in a bowl and cover tightly with plastic wrap or a lid for 10 minutes. This steams the skin, making it easy to remove.
  4. Once cool enough to handle, peel the skin off the peppers, remove the stems and seeds. Roughly chop the roasted flesh.
  5. Cook the pasta according to package directions until al dente. Reserve about 1 cup of the starchy pasta water before draining.
  6. While the pasta cooks, drain the soaked cashews. In a high-speed blender, combine the roasted pepper flesh, drained cashews, garlic, nutritional yeast, olive oil, lemon juice, salt, and pepper.
  7. Add 1/4 cup of the reserved pasta water to the blender. Blend until the sauce is completely smooth and creamy. Add more pasta water, one tablespoon at a time, to reach your desired consistency.
  8. Return the drained pasta to the pot. Pour the red pepper sauce over the pasta. Toss gently to coat everything evenly.
  9. Serve immediately, garnished with fresh basil if you like.

Notes

  • For the creamiest sauce, make sure your cashews are fully softened before blending.
  • If you do not have a high-speed blender, you may need to add a little extra pasta water for smoothness.
  • Taste the sauce before adding it to the pasta and adjust salt or lemon juice as needed.
