  • 2 lbs red bell peppers
  • 1 tbsp olive oil
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream (or cashew milk for dairy-free)
  • 1/2 tsp smoked paprika
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the red bell peppers in half, remove the seeds, and place them cut-side down on a baking sheet.
  3. Roast for 20-25 minutes, or until the skins are blackened and blistered.
  4. Transfer the roasted peppers to a bowl and cover with plastic wrap for about 10 minutes to steam.
  5. Once cooled enough to handle, peel off the skins from the peppers.
  6. Heat olive oil in a large pot or Dutch oven over medium heat.
  7. Add the chopped onion and cook until softened, about 5-7 minutes.
  8. Add the minced garlic and cook for another minute until fragrant.
  9. Add the roasted red peppers and vegetable broth to the pot.
  10. Bring to a simmer, then reduce heat and cook for 10 minutes to allow flavors to meld.
  11. Carefully transfer the soup to a blender (or use an immersion blender) and blend until completely smooth.
  12. Return the soup to the pot. Stir in the heavy cream (or cashew milk) and smoked paprika.
  13. Heat gently until warmed through, do not boil.
  14. Season with salt and black pepper to your preference.
  15. Serve hot, garnished with fresh basil if desired.

Notes

  • For a deeper flavor, you can roast the peppers until they are very soft and slightly caramelized.
  • If you don’t have cashew milk, full-fat coconut milk can also be used for a creamy, dairy-free alternative.
  • Adjust the amount of cream to achieve your desired richness.
  • Taste and adjust seasoning before serving.
