Make a simple, creamy seafood salad using imitation crab meat. This recipe is quick to prepare and works well for sandwiches or as a cold appetizer.

  • 12 oz imitation crab meat (surimi), shredded
  • 1/2 cup mayonnaise
  • 2 tablespoons celery, finely chopped
  • 2 tablespoons red onion, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)

Instructions

  1. Shred the imitation crab meat into small pieces using your hands or two forks. Place the shredded crab in a medium mixing bowl.
  2. In a separate small bowl, whisk together the mayonnaise, lemon juice, and Dijon mustard until smooth.
  3. Add the chopped celery and red onion to the bowl with the shredded crab.
  4. Pour the mayonnaise mixture over the crab and vegetables.
  5. Gently fold all ingredients together until everything is evenly coated and creamy. Do not overmix.
  6. Stir in the salt, pepper, and optional parsley.
  7. Cover the bowl and chill the salad in the refrigerator for at least 30 minutes before serving to allow the flavors to combine.

Notes

  • For a lighter salad, substitute half of the mayonnaise with plain Greek yogurt.
  • If you prefer a sweeter salad, add 1 teaspoon of sweet pickle relish.
  • Serve this salad cold on toasted bread, crackers, or over a bed of crisp lettuce.
