4 Boneless, skinless chicken breasts
1 cup Fresh spinach, chopped
4 ounces Cream cheese, softened
1/2 cup Shredded Parmesan cheese
1/4 cup Shredded Mozzarella cheese
1 clove Garlic, minced
1/4 teaspoon Salt
1/8 teaspoon Black pepper
2 tablespoons Olive oil
Instructions
Preheat your oven to 400 degrees F (200 degrees C). Lightly grease a baking dish.
In a small bowl, combine the chopped spinach, softened cream cheese, Parmesan cheese, Mozzarella cheese, minced garlic, salt, and pepper. Mix well until fully combined.
Place a chicken breast between two pieces of plastic wrap. Pound the chicken to an even 1/4-inch thickness using a meat mallet. Repeat for all four breasts.
Spoon about 1/4 of the cheese and spinach mixture onto the thinner end of each pounded chicken breast.
Tightly roll up each chicken breast. Secure the seam with toothpicks if needed.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken rolls for 2-3 minutes per side until lightly golden brown.
Transfer the skillet to the preheated oven. Bake for 20-25 minutes, or until the internal temperature of the chicken reaches 165 degrees F (74 degrees C).
Remove the toothpicks before serving. Let the chicken rest for 5 minutes before slicing.
