This Creamy Spinach Parmesan Orzo delivers a silky, rich side dish. It fixes common recipe flaws to give you a guaranteed satisfying texture and cheesy flavor that pairs perfectly with chicken or seafood.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 cup fresh spinach, roughly chopped
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1 tablespoon butter
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Heat olive oil in a medium saucepan over medium heat. Add the onion and cook until softened, about 4 minutes.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the orzo pasta and toast for 2 minutes, stirring constantly.
  4. Pour in the broth. Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 12-15 minutes, or until the orzo is cooked al dente and most of the liquid is absorbed.
  5. Remove the saucepan from the heat. Stir in the heavy cream, butter, and Parmesan cheese until the cheese melts and the mixture becomes creamy.
  6. Fold in the chopped spinach. Stir until the spinach wilts, about 1 minute.
  7. Season with salt and pepper to your liking. Serve immediately with extra Parmesan on top.

Notes

  • For extra flavor, toast the orzo until it turns a light golden brown before adding the broth.
  • Use good quality Parmesan cheese; freshly grated melts best.
  • If the orzo seems too thick, add a splash more broth or cream until you reach your desired consistency.
