1.5 pounds boneless, skinless chicken breasts, cut into 1-inch pieces
Salt and freshly ground black pepper to taste
1 teaspoon Italian seasoning
3 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 1/4 cups heavy cream
1/2 cup grated Parmesan cheese
2 cups fresh spinach
Red pepper flakes to taste (optional)
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add chicken pieces, season with salt, pepper, and Italian seasoning. Cook until browned on all sides, about 5-7 minutes.
Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and the sauce begins to thicken.
Add fresh spinach and cook until wilted, about 1-2 minutes.
Season with red pepper flakes if desired.
Serve immediately.
Notes
For extra flavor, you can add a splash of white wine after cooking the garlic and sun-dried tomatoes, letting it reduce before adding the cream.
If you don’t have heavy cream, half-and-half can be used, but the sauce may be slightly thinner.
Feel free to add other vegetables like mushrooms or bell peppers along with the spinach.
