  • 1 pound pasta (penne or rotini work well)
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes packed in oil, drained and chopped
  • 1/2 cup chicken or vegetable broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper to taste

Instructions

  1. Cook pasta according to package directions until al dente. Reserve about 1 cup of the pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 5 minutes.
  3. Add minced garlic and chopped sun-dried tomatoes to the skillet. Cook for 1 minute until fragrant.
  4. Pour in the broth and bring it to a simmer, scraping up any bits from the bottom of the pan. Let it reduce slightly for about 2 minutes.
  5. Reduce heat to low. Stir in the heavy cream and let it warm through. Do not boil.
  6. Stir in the grated Parmesan cheese until the sauce is smooth and creamy. Season with salt and pepper.
  7. Add the drained pasta to the skillet with the sauce. Toss to coat everything evenly.
  8. If the sauce is too thick, add reserved pasta water, one splash at a time, until you reach your desired consistency.
  9. Stir in the fresh basil just before serving.

Notes

  • We recommend using a good quality Parmesan cheese for the best melt and flavor.
  • If you prefer a vegetarian option, vegetable broth works perfectly in place of chicken broth.
  • For an extra kick, add a pinch of red pepper flakes with the garlic.
