  • 1 cup vegetable or chicken broth

  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 3 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Pour in diced tomatoes (with juice), tomato sauce, broth, Italian seasoning, salt, and pepper. Stir well.
  4. Bring the mixture to a gentle simmer.
  5. Add the tortellini to the skillet. Stir to coat.
  6. Reduce heat to medium-low, cover the skillet, and cook according to tortellini package directions, usually 8-10 minutes, stirring occasionally to prevent sticking.
