  • 4 Salmon fillets (about 6 oz each)
  • 1 tablespoon Olive oil
  • Salt and Black pepper to taste
  • 4 cloves Garlic, minced
  • 1/2 cup Chicken broth
  • 1 cup Heavy cream
  • 1/2 cup Sun-dried tomatoes, drained and chopped
  • 2 cups Fresh spinach
  • 1/4 cup Parmesan cheese, grated
  • 1 teaspoon Dried Italian seasoning

Instructions

  1. Season the salmon fillets generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Sear the salmon fillets for 3-4 minutes per side until golden brown and cooked through. Remove the salmon and set aside.
  3. Reduce the heat to medium. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Do not let it burn.
  4. Pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Let it simmer for 1 minute.
  5. Stir in the heavy cream, sun-dried tomatoes, and Italian seasoning. Bring the sauce to a gentle simmer.
  6. Add the fresh spinach to the sauce, stirring until it wilts down completely.
  7. Stir in the grated Parmesan cheese until the sauce is smooth and thickened slightly. Taste and adjust seasoning if needed.
  8. Return the salmon fillets to the skillet. Spoon the sauce over the salmon.
  9. Serve immediately.

  • You can use frozen spinach if you thaw and squeeze out all excess water first.
  • For a brighter flavor, add a squeeze of fresh lemon juice at the end.
