1 large frozen banana, sliced
1 scoop vanilla protein powder (whey or plant-based)
1/2 cup frozen cauliflower florets (for thickness, no flavor change)
1/4 cup unsweetened almond milk (or milk of choice)
1 teaspoon vanilla extract
1/2 teaspoon xanthan gum (optional, for extra thickness)
Toppings: fresh berries, granola, sliced almonds
Instructions
Place the frozen banana, protein powder, frozen cauliflower, almond milk, vanilla extract, and xanthan gum (if using) into a high-speed blender or food processor.
Start blending on low, using the tamper tool constantly to push the ingredients down toward the blades.
Add only small splashes of extra liquid (one teaspoon at a time) if the mixture refuses to blend. The goal is to keep the mixture as thick as possible.
Continue blending and tamping until the mixture is completely smooth and has the consistency of soft-serve ice cream.
Spoon the thick mixture immediately into a bowl.
Arrange your desired toppings over the surface.
Serve immediately with a spoon.
Notes
For maximum creaminess, use a high-powered blender and ensure your banana is fully frozen.
If you prefer a lower-carb option, substitute the frozen banana with 1 cup of frozen zucchini chunks and add 1-2 tablespoons of maple syrup or stevia for sweetness.
