Ingredients
Scale
2 medium zucchini
1 tablespoon olive oil
2 cloves garlic, minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
Optional: chopped fresh parsley for garnish
Instructions
Wash and trim the ends of the zucchini. Use a spiralizer or a vegetable peeler to create noodles from the zucchini.
Heat olive oil in a large skillet over medium heat. Add minced garlic and cook until fragrant, about 1 minute.
Pour in the heavy cream and bring to a gentle simmer.
Stir in the grated Parmesan cheese, salt, and pepper. Cook, stirring constantly, until the sauce thickens, about 3-5 minutes.
Add the zucchini noodles to the skillet and toss gently to coat them in the Alfredo sauce.
Cook for 2-3 minutes, or until the zucchini noodles are tender yet still slightly firm. Do not overcook, as they can become watery.
Serve immediately, garnished with fresh parsley if desired.
Notes
Ensure your zucchini noodles are not too wet before adding them to the sauce. You can pat them dry with paper towels if needed.
Adjust seasoning to your preference.
Feel free to add cooked chicken, shrimp, or vegetables for a more complete meal.
