2 large Russet potatoes, peeled
1 small yellow onion, peeled
1 large egg
2 tablespoons all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
3 tablespoons avocado oil or other neutral oil, plus more for brushing
Instructions
Grate the potatoes and onion using the large holes of a box grater.
Place the grated potato and onion mixture in a clean kitchen towel or several layers of cheesecloth. Squeeze tightly over the sink to remove as much liquid as possible. This step is crucial for crispiness.
Transfer the dried potato and onion mixture to a medium bowl.
Add the egg, flour, salt, and pepper to the bowl. Mix until just combined. Do not overmix.
Preheat your air fryer to 400°F (200°C).
Lightly brush the air fryer basket with oil.
Form the potato mixture into small, flat patties, about 2 inches wide and 1/2 inch thick. You should get about 8 to 10 latkes.
Carefully place the latkes in the air fryer basket in a single layer, ensuring they do not touch. Work in batches if necessary.
Lightly brush the tops of the latkes with a little more oil.
Air fry for 8 minutes. Flip the latkes carefully.
Air fry for another 5 to 7 minutes, or until they are deep golden brown and very crispy.
Serve immediately with your favorite toppings.
Notes
Squeezing all the liquid from the potatoes is the secret to avoiding soggy latkes.
Do not skip brushing the tops with oil; this helps them brown properly in the air fryer.
For extra crispness, you can lightly spray the basket with cooking spray before adding the oiled latkes.
