  • 12 small corn tortillas

Instructions

  1. Cut chicken breasts into bite-sized pieces.
  2. Soak chicken in buttermilk mixed with paprika, garlic powder, onion powder, and cayenne for at least 30 minutes.
  3. In a shallow dish, mix flour and cornstarch thoroughly.
  4. Remove chicken from buttermilk, letting excess drip off. Do not wipe dry.
  5. Dredge chicken pieces in the flour mixture, pressing firmly to coat completely.
  6. Heat vegetable oil in a deep skillet to 350°F (175°C).
  7. Fry chicken in batches until golden brown and cooked through, about 5-7 minutes. Drain on a wire rack.
  8. While chicken fries, prepare the secret sauce by whisking together mayonnaise, sriracha, lime juice, honey, and cumin.
  9. Warm the tortillas briefly in a dry skillet or microwave until pliable.
  10. Assemble the tacos: Place crispy chicken inside the warm tortillas.
