Ingredients

Scale
  • 1 pound salmon fillet, skin removed and cut into 1-inch cubes
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Pat the salmon cubes very dry using paper towels. This step is key for crispiness.
  2. Season the salmon cubes evenly with salt, pepper, and paprika.
  3. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  4. Add the seasoned salmon cubes to the hot skillet in a single layer. Do not overcrowd the pan; cook in batches if necessary.
  5. Sear the salmon for 2-3 minutes without moving them to develop a deep golden crust.
  6. Flip the salmon cubes and cook for another 1-2 minutes until cooked through and crispy on the edges. Remove the salmon from the skillet and set aside.
  7. Reduce the heat to medium-low. Add the butter to the same skillet.
  8. Once the butter is melted, add the minced garlic. Cook for about 30 seconds until fragrant. Do not let the garlic brown.
  9. Return the crispy salmon bites to the skillet. Toss gently to coat them completely in the garlic butter sauce.
  10. Remove from heat immediately. Garnish with fresh parsley before serving.

Notes

  • For the best crisp, ensure your salmon is very cold and very dry before cooking.
  • Use high-quality fresh garlic for the best flavor payoff.
  • These bites are excellent served over rice, mixed into a salad, or eaten as a quick snack.
