Ingredients

Scale
  • 2 lbs small potatoes (Yukon Gold or similar)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Place potatoes in a large pot and cover with cold, salted water. Bring to a boil.
  3. Boil potatoes until fork-tender, about 15-20 minutes. Drain well.
  4. Spread the boiled potatoes onto a baking sheet.
  5. Using the bottom of a sturdy glass or a potato masher, gently smash each potato until it is about 1/2 inch thick. Do not break them apart completely.
  6. In a small bowl, mix the olive oil, minced garlic, salt, and pepper.
  7. Brush the garlic oil mixture evenly over the top of each smashed potato.
  8. Bake for 20-25 minutes, or until the edges are deeply golden brown and crispy.
  9. Remove from the oven and sprinkle immediately with fresh parsley before serving hot.

Notes

  • Use small, waxy potatoes for the best texture.
  • Do not over-boil the potatoes; they should hold their shape when smashed.
  • For extra crispness, you can carefully flip the potatoes halfway through baking.
  • Allow the potatoes to dry slightly after boiling before smashing for superior crisping.
