  • 1/2 cup honey

  • 2 tablespoons rice vinegar
  • 1 tablespoon minced fresh ginger
  • 2 cloves garlic, minced
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (slurry)
  • Vegetable oil, for frying
  • Sesame seeds and chopped green onions, for garnish

Instructions

  1. Mix flour, salt, pepper, garlic powder, and paprika in a medium bowl.
  2. Pour the ice-cold water into the dry ingredients. Whisk briefly until just combined; a few lumps are fine. Do not overmix.
  3. Heat about 2 inches of vegetable oil in a heavy-bottomed pot to 350°F (175°C).
  4. Dip the cauliflower florets into the batter, letting excess drip off.
  5. Fry the florets in small batches, turning occasionally, until golden brown and crispy, about 4-6 minutes. Remove with a slotted spoon and drain on a wire rack. Let them rest for 5 minutes.
  6. While the cauliflower fries, prepare the sauce. Combine honey, soy sauce, rice vinegar, ginger, and minced garlic in a small saucepan. Bring to a simmer over medium heat.
  7. Whisk in the cornstarch slurry. Cook, stirring constantly, until the sauce thickens and becomes glossy, about 1 minute. Remove from heat and stir in the sesame oil.
  8. Place the crispy cauliflower bites in a large bowl. Pour the warm sauce over the cauliflower. Toss gently to coat every piece evenly.
  9. Serve immediately garnished with sesame seeds and green onions.
