Get perfectly crispy, flavorful chicken wings without the mess and added fat of deep frying. These oven-baked wings deliver that satisfying crunch you crave for your next game day or casual meal.

Ingredients

Scale
  • 3 lbs Chicken Wings (flats and drumettes separated)
  • 1 tablespoon Baking Powder (not baking soda)
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Paprika
  • 1/4 teaspoon Cayenne Pepper (optional)
  • 2 tablespoons melted Butter (for tossing after baking)
  • Your favorite hot sauce or dry rub seasoning (for finishing)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a wire rack set over the sheet.
  2. Pat the chicken wings completely dry using paper towels. This step is key for crispiness.
  3. In a large bowl, combine the baking powder, salt, garlic powder, black pepper, paprika, and cayenne pepper (if using).
  4. Add the dried wings to the bowl. Toss well until every wing piece is evenly coated with the seasoning mixture. The baking powder helps draw out moisture for a crispier skin.
  5. Arrange the seasoned wings on the prepared baking sheet or wire rack in a single layer, ensuring there is space between each wing for air circulation.
  6. Bake for 25 minutes.
  7. Flip each wing over. Return to the oven and bake for another 20 to 25 minutes, or until the wings are deep golden brown and very crisp.
  8. Remove the wings from the oven. Immediately place them in a clean bowl.
  9. Drizzle with melted butter and toss gently to coat.
  10. Toss again with your preferred finishing sauce or dry rub, if desired. Serve immediately.

Notes

  • Using baking powder is essential. Do not substitute with baking soda.
  • Do not skip drying the wings thoroughly; excess moisture prevents crisping.
  • For extra crispness, use a wire rack set over the baking sheet to allow air to circulate underneath the wings.
