Instructions
Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking sheet or line it with parchment paper.
In a medium bowl, combine the shredded chicken, softened cream cheese, drained salsa, chili powder, cumin, and garlic powder. Mix until the filling is uniform.
Warm the corn tortillas briefly in the microwave (about 20-30 seconds wrapped in a damp paper towel) to make them pliable and prevent cracking.
Place about 2 tablespoons of the chicken mixture near one edge of a warm tortilla.
Roll the tortilla tightly around the filling to form a cylinder (taquito). Secure with a toothpick if necessary, though a tight roll often holds.
Place the rolled taquitos seam-side down on the prepared baking sheet.
Lightly brush or spray the tops of the taquitos evenly with vegetable oil or cooking spray. This step is key for crispiness.
Bake for 12 to 15 minutes, then carefully flip the taquitos over.
Bake for another 10 to 15 minutes, or until the tortillas are golden brown and very crispy.
Remove toothpicks before serving.

Use low-moisture salsa or drain it thoroughly; excess liquid makes the tortillas soggy.
For extra crispiness, you can briefly switch the oven to the broiler setting for the last 1-2 minutes, watching closely to prevent burning.
