2 medium zucchini
1/2 cup all-purpose flour
2 large eggs, lightly beaten
1 cup Panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray or 1 tablespoon olive oil
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash and trim the ends of the zucchini. Cut the zucchini lengthwise into fry shapes, about 1/4 to 1/2 inch thick.
Set up a three-stage dredging station. Place flour in the first shallow dish. Whisk eggs in the second dish. In the third dish, combine Panko breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper.
Take a zucchini stick and coat it lightly in flour, shaking off the excess.
Dip the floured zucchini into the egg wash, letting excess drip off.
Press the zucchini firmly into the breadcrumb mixture, making sure it adheres well on all sides.
Place the coated fries in a single layer on the prepared baking sheet. Do not let them touch.
Lightly spray the tops of the fries with cooking spray or drizzle with olive oil.
Bake for 12-15 minutes, flip the fries carefully, and bake for another 8-10 minutes, or until golden brown and crisp.

Notes
For extra crispness, you can bake them an additional 3-5 minutes after flipping.
Ensure the zucchini pieces are dry before you start breading them; moisture prevents crispiness.
