2 medium zucchinis
1 cup all-purpose flour
2 large eggs, beaten
1 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon salt

Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Wash and trim the ends off the zucchinis. Cut each zucchini into fry-like sticks, about 1/2 inch thick.
Set up three shallow dishes. In the first dish, place the flour. In the second dish, place the beaten eggs. In the third dish, combine the grated Parmesan cheese, garlic powder, salt, and pepper.
Dredge each zucchini stick first in the flour, shaking off any excess.
Dip the floured zucchini stick into the beaten eggs, ensuring it’s fully coated.
Finally, coat the egg-dipped zucchini stick in the Parmesan cheese mixture, pressing gently to adhere.
Place the coated zucchini sticks in a single layer on the prepared baking sheet.
Lightly spray the tops of the zucchini fries with cooking spray or drizzle with a little olive oil.
Bake for 15-20 minutes, flipping halfway through, until golden brown and crispy.
Notes
For extra crispiness, you can bake them a few minutes longer, watching carefully to prevent burning.
Serve immediately with your favorite dipping sauce like marinara, ranch, or aioli.
