1 block (14-16 oz) extra-firm tofu, pressed
2 tbsp soy sauce or tamari
1 tbsp rice vinegar
1 tsp sesame oil
1 tsp garlic powder
1 tsp ginger powder
1 cup quinoa, rinsed
2 cups vegetable broth
1 tbsp olive oil
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup broccoli florets
1/2 red onion, chopped
Salt and pepper to taste
Instructions
Preheat oven to 400°F (200°C).
Cut pressed tofu into 1-inch cubes.
In a bowl, whisk together soy sauce, rice vinegar, sesame oil, garlic powder, and ginger powder.
Add tofu cubes to the marinade and toss to coat. Let marinate for at least 15 minutes.
Spread tofu on a baking sheet lined with parchment paper. Bake for 20-25 minutes, flipping halfway through, until golden brown and crispy.
While tofu bakes, cook quinoa according to package directions using vegetable broth.
In a large skillet, heat olive oil over medium heat.
Add diced bell peppers, broccoli florets, and chopped red onion. Sauté for 5-7 minutes until vegetables are tender-crisp.
Season vegetables with salt and pepper to taste.
Add cooked quinoa to the skillet with the vegetables. Stir to combine.
Serve the quinoa pilaf topped with the crispy baked tofu.
Notes
For extra crispy tofu, ensure you press out as much liquid as possible.
Feel free to add other vegetables like zucchini, carrots, or snap peas.
A sprinkle of sesame seeds or chopped green onions makes a nice garnish.
