A simple, hearty ground beef and bean casserole cooked low and slow in your slow cooker for a convenient dinner.

  • 1.5 lb ground beef
  • 1 medium onion, chopped
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can kidney beans, rinsed and drained
  • 1 (15 oz) can sweet corn, drained
  • 1 (10.75 oz) can condensed cream of mushroom soup
  • 1 cup barbecue sauce
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1 cup shredded sharp cheddar cheese

Instructions

  1. Brown the ground beef and chopped onion in a skillet over medium heat until the beef is fully cooked. Drain off any excess grease.
  2. Transfer the cooked beef and onion mixture to your slow cooker.
  3. Add the rinsed black beans, kidney beans, drained corn, cream of mushroom soup, barbecue sauce, chili powder, cumin, and garlic powder to the slow cooker.
  4. Stir all ingredients together until they are well combined.
  5. Cover the slow cooker and cook on LOW for 6 to 8 hours, or on HIGH for 3 to 4 hours.
  6. About 30 minutes before serving, stir the mixture and sprinkle the shredded cheddar cheese evenly over the top.
  7. Replace the lid and allow the cheese to melt completely before serving.

Notes

  • For a spicier flavor, add 1/4 teaspoon of cayenne pepper with the other spices.
  • You can substitute cream of chicken soup for cream of mushroom soup if preferred.
  • Serve this casserole over rice or with cornbread on the side.
