Ultimate Crockpot French Onion Meatloaf with Melted Swiss Cheese

Make a tender and flavorful meatloaf right in your slow cooker, infused with the savory taste of French onion soup and topped with melted Swiss cheese.

Ingredients

  • 2 lbs ground beef
  • 1 large onion, thinly sliced and caramelized
  • 1 (10.5 oz) can condensed French onion soup, undiluted
  • 1 cup breadcrumbs
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 4 slices Swiss cheese

Instructions

  1. In a large bowl, gently mix the ground beef, caramelized onions, breadcrumbs, egg, milk, Worcestershire sauce, thyme, salt, and pepper. Do not overmix.
  2. Shape the mixture into a loaf shape and place it in the bottom of your slow cooker insert.
  3. Pour half of the undiluted French onion soup over the top of the meatloaf.
  4. Cover the slow cooker and cook on LOW for 5 to 6 hours or on HIGH for 3 to 3.5 hours, until the internal temperature reaches 160 degrees Fahrenheit.
  5. During the last 15 minutes of cooking, remove the lid and pour the remaining half of the soup around the edges of the meatloaf (not directly on top).
  6. Place the Swiss cheese slices on top of the meatloaf. Cover and cook until the cheese is melted and bubbly.
  7. Carefully remove the meatloaf from the slow cooker and let it rest for 10 minutes before slicing and serving.

Notes

  • To quickly caramelize onions, cook them slowly in a skillet over low heat with a small amount of butter until deeply browned.
  • For a firmer loaf, line the slow cooker with parchment paper before adding the meat mixture.
  • You can substitute half the ground beef with ground veal or ground pork for a different texture.
