A fun, oven-baked twist on the fast-food favorite, this Crunchwrap Casserole layers seasoned ground beef, cheese, and taco toppings between tortillas for a delicious and easy weeknight meal.

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 8 flour tortillas (8-inch)
  • 1 (15 ounce) can refried beans, warmed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup crushed tortilla chips
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 1/4 cup chopped black olives
  • Optional toppings: shredded lettuce, diced tomatoes, jalapenos

Instructions

  1. Preheat your oven to 375°F (190°C). Brown the ground beef in a skillet over medium-high heat. Drain off any excess grease.
  2. Add the taco seasoning and water to the skillet with the beef. Stir well and simmer for 5 minutes, or until the sauce has thickened.
  3. Spread a thin layer of refried beans on the bottom of a 9×13 inch baking dish.
  4. Layer two tortillas over the refried beans, overlapping them slightly to cover the bottom.
  5. Spread half of the seasoned beef mixture over the tortillas.
  6. Sprinkle half of the cheddar and Monterey Jack cheeses over the beef.
  7. Add another layer of two tortillas.
  8. Spread the remaining refried beans over the tortillas.
  9. Spread the remaining seasoned beef mixture over the beans.
  10. Sprinkle the remaining cheddar and Monterey Jack cheeses over the beef.
  11. Top with the crushed tortilla chips.
  12. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  13. Let the casserole rest for 5 minutes before serving.
  14. Serve with sour cream, salsa, green onions, black olives, and any other desired toppings.

Notes

  • For an extra layer of flavor, you can add a layer of your favorite salsa between the beef and cheese layers.
  • If you don’t have taco seasoning, you can make your own with chili powder, cumin, paprika, garlic powder, onion powder, and a pinch of cayenne pepper.
  • Crushed Doritos can be used instead of tortilla chips for an extra cheesy crunch.
