2 lbs butternut squash, peeled, seeded, and cubed
1 tablespoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1/2 cup milk
1/4 cup grated Parmesan cheese
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup breadcrumbs
2 tablespoons melted butter
Instructions
Preheat your oven to 375°F (190°C).
In a large pot, boil the cubed squash until tender, about 15-20 minutes. Drain well.
While the squash is cooking, heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
In a large bowl, mash the drained squash. Stir in the cooked onion and garlic mixture, milk, Parmesan cheese, salt, and pepper.
Transfer the squash mixture to a greased 8×8 inch baking dish.
In a small bowl, combine breadcrumbs and melted butter. Sprinkle evenly over the squash mixture.
Bake for 25-30 minutes, or until the topping is golden brown and the casserole is heated through.
Notes
For an extra crunch, you can add chopped nuts like walnuts or pecans to the breadcrumb topping.
Feel free to substitute other types of winter squash for butternut squash.
A sprinkle of paprika on top before baking adds a nice color and flavor.
