1 cup dill pickle chips, drained well and patted very dry
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
2 large eggs, lightly beaten
1 cup panko breadcrumbs
1/4 cup grated Parmesan cheese (optional, for extra flavor)

Instructions
Place the dried pickle chips on paper towels and press down firmly to remove as much moisture as possible. Excess moisture prevents crispiness.
Set up a standard breading station with three shallow dishes. In the first dish, mix the flour, salt, pepper, and garlic powder.
In the second dish, place the beaten eggs.
In the third dish, combine the panko breadcrumbs and Parmesan cheese, if using.
Working in small batches, dredge each pickle chip first in the flour mixture, shaking off excess.
Dip the floured chip into the egg mixture, letting excess drip off.
Coat thoroughly in the panko mixture, pressing gently so the breadcrumbs adhere well.
Place the breaded pickles in a single layer on a plate or baking sheet.
Preheat your air fryer to 380°F (195°C) for 5 minutes.
Lightly spray the air fryer basket with cooking spray. Arrange the pickles in a single layer in the basket, ensuring they do not overlap. Work in batches if necessary.
Lightly spray the tops of the pickles with cooking spray.
Air fry for 8 to 10 minutes, flipping the pickles halfway through the cooking time. Continue spraying lightly with oil during the flip.
The pickles are done when they are golden brown and crispy. Serve immediately with your favorite dipping sauce.
Notes
Patting the pickles completely dry is the most important step for achieving a crunchy texture.
For a spicy kick, add 1/2 teaspoon of cayenne pepper to the flour mixture.
If you prefer a dipping sauce, a simple mix of 1/2 cup ranch dressing and 1 tablespoon hot sauce works well.
