Ingredients
Scale
1 cup rolled oats
1 scoop (30g) chocolate whey or casein protein powder
1/2 cup unsweetened almond milk
1/4 cup unsweetened applesauce
1 large egg white
2 tablespoons cocoa powder
1 tablespoon zero-calorie sweetener (like erythritol or monk fruit)
1 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon mini chocolate chips (for cookie layer)
1 tablespoon melted dark chocolate (for brownie swirl)
Instructions
Preheat your oven to 375°F (190°C). Lightly grease a small, oven-safe dish (about 6×4 inches).
In a bowl, combine the rolled oats, protein powder, cocoa powder, baking powder, sweetener, and salt. Mix well.
Add the almond milk, applesauce, and egg white to the dry ingredients. Stir until just combined into a thick batter.
Pour half of the batter into the prepared baking dish. Sprinkle the mini chocolate chips evenly over this layer.
Top with the remaining batter. Drizzle the melted dark chocolate over the top and use a toothpick to gently swirl it for a ‘brookie’ effect.
Bake for 20 to 25 minutes, or until the center is set and a toothpick inserted comes out mostly clean.
Let the baked oats cool slightly before cutting into one serving.
Notes
Use casein protein powder for a thicker, more cake-like texture. Whey protein works but may result in a slightly softer center.
For accurate nutrition, weigh your protein powder and chocolate chips.
This recipe is designed to yield one large, high-protein serving.
