Instructions

  1. Place the softened cream cheese, half of the blue cheese, sour cream, chopped olives, olive brine, gin (if using), garlic powder, and black pepper into a medium mixing bowl.
  2. Use an electric mixer or a sturdy spoon to beat the ingredients together until the mixture is completely smooth and creamy. Stop mixing when no large lumps of blue cheese remain, but maintain a slightly textured dip.
  3. Taste the dip. Add salt only if necessary, remembering that the brine and blue cheese already contribute significant saltiness.
  4. Transfer the dip to your serving dish. Sprinkle the remaining blue cheese crumbles over the top.
  5. Cover the dish and chill the dip in the refrigerator for at least 30 minutes. This allows the flavors to meld together.
