1 pound ground beef
1 packet taco seasoning
1/2 cup water
1 can (15 ounces) refried beans
1 can (10 ounces) enchilada sauce
1 cup sour cream
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1 bag (9.75 ounces) Nacho Cheese Doritos, crushed
Instructions
Preheat oven to 350°F (175°C).
Brown ground beef in a skillet over medium-high heat. Drain off any excess grease.
Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, or until the sauce has thickened.
In a 9×13 inch baking dish, spread the refried beans evenly across the bottom.
Pour the enchilada sauce over the refried beans.
Spread the sour cream evenly over the enchilada sauce.
Layer the seasoned ground beef mixture over the sour cream.
Sprinkle both cheeses over the ground beef.
Top with the crushed Doritos.
Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Notes
For an extra kick, add a layer of diced jalapeños before the cheese.
You can substitute any flavor of Doritos you prefer.
Serve with your favorite taco toppings like lettuce, tomatoes, or salsa.
