A fun and indulgent casserole featuring seasoned ground beef, creamy cheese, and crunchy Doritos layers, offering a cheesy twist on a taco bake.

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 1 can (15 ounces) diced tomatoes and green chilies, undrained
  • 1 can (15 ounces) refried beans
  • 1 can (10 ounces) enchilada sauce
  • 1 bag (9.25 ounces) Nacho Cheese Doritos, crushed
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Optional toppings: sour cream, salsa, chopped cilantro, diced onions

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium-high heat until browned. Drain off any excess grease.
  3. Stir in the taco seasoning, diced tomatoes and green chilies (undrained), refried beans, and enchilada sauce. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  4. Spread half of the crushed Doritos in the bottom of a 9×13 inch baking dish.
  5. Pour the beef mixture evenly over the Doritos.
  6. Sprinkle the shredded cheddar cheese and Monterey Jack cheese over the beef mixture.
  7. Top with the remaining crushed Doritos.
  8. Bake for 20-25 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  9. Let the casserole stand for 5 minutes before serving.
  10. Serve with your favorite toppings.

Notes

  • For extra crunch, reserve some crushed Doritos to sprinkle on top just before serving.
  • You can use any flavor of Doritos you prefer, but Nacho Cheese is recommended for the classic taco flavor.
  • Adjust the amount of taco seasoning to your spice preference.
