  • 3/4 cup vegetable oil
  • 4 large eggs

  • 2 cups grated carrots (about 3-4 medium carrots)
  • 1 cup chopped pecans or walnuts (optional)
  • For the Cream Cheese Frosting:
  • 8 ounces cream cheese, softened
  • 1/2 cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • For Decoration:
  • Food coloring (pink, black)
  • Small candy or fondant for bunny eyes and noses

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a separate bowl, whisk together the granulated sugar and vegetable oil.
  4. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the grated carrots and chopped nuts (if using).
  7. Pour the batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. While the cake cools, prepare the cream cheese frosting. In a medium bowl, beat the softened cream cheese and butter until smooth and creamy.
  11. Gradually add the powdered sugar, one cup at a time, beating until well combined and fluffy. Stir in the vanilla extract.
  12. Once the cake bars are completely cool, spread the cream cheese frosting evenly over the top.
  13. Decorate the bars to look like Easter bunnies. You can use a piping bag with a round tip to create bunny faces using the frosting. Use small candies or fondant for the eyes and noses, and a bit of pink frosting for the ears. Alternatively, you can cut the carrot cake into bar shapes and then decorate each bar individually.
