1 tablespoon olive oil
1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
1 pound smoked sausage (like andouille), sliced
1 large onion, chopped
2 bell peppers (any color), chopped
3 cloves garlic, minced
1 (14.5 ounce) can diced tomatoes, undrained
4 cups chicken broth
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper (or to taste)
Salt and freshly ground black pepper to taste
2 cups uncooked long-grain white rice
1/2 cup chopped fresh parsley, for garnish
Instructions
Heat olive oil in a large Dutch oven or pot over medium-high heat.
Add chicken and sausage and cook until browned on all sides. Remove from pot and set aside.
Add onion and bell peppers to the pot and cook until softened, about 5-7 minutes.
Stir in garlic and cook for 1 minute until fragrant.
Pour in diced tomatoes and chicken broth. Add thyme, smoked paprika, and cayenne pepper. Season with salt and pepper.
Bring the mixture to a boil.
Stir in the uncooked rice.
Return the cooked chicken and sausage to the pot.
Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and liquid is absorbed.
Let stand covered for 5 minutes before fluffing with a fork.
Garnish with fresh parsley before serving.
Notes
For a spicier jambalaya, increase the cayenne pepper.
You can use other types of sausage like kielbasa or chorizo.
Ensure your pot is large enough to hold all ingredients comfortably.
